While making Lucknow Chicken Biryani, first we need to prepare the required ingredients, it takes about 45 minutes. It takes about 60 minutes to make Lucknow Chicken Biryani. It takes a total of 105 minutes.

Lucknow Chicken Biryani Recipe | How to make Lucknow Chicken Biryani at home?

Materials:

  • 1 kg of rice
  • 800 grams of chicken
  • 2 tablespoons of curd
  • Juice of 1 lemon
  • 3 onions, thinly sliced
  • 1/2 cup cilantro, finely chopped
  • 4 green chilies, cut in half
  • 8 dry red chillies
  • 2 bay leaves
  • 1 tsp whole coriander
  • 1 tsp dill
  • 3 small cardamoms
  • 1 large cardamom
  • 3 cloves
  • 1 jar of garlic
  • 1 piece of ginger
  • 1/2 tsp Shahi Jeera
  • 15 black pepper
  • Ghee as needed
  • 2 teaspoons garlic, crushed ginger
  • Salt to taste

How to make Lucknow Chicken Biryani

  • First of all wash basmati rice with plenty of water and soak in clean water for some time.
  • Now boil two to two and a half liters of water in a cooker or pot depending on the quantity of rice.
  • When the water starts to boil, add shahi jeera, cinnamon, bay leaves, cardamom, cloves etc. Cook the rice 90% by adding spices and little salt and a few drops of oil. Finally filter it.
  • Meanwhile, cut the chicken into small pieces, wash them and keep them.
  • Now add oil or ghee in a pan and saute a lot of onion till it turns brown and take it out and keep it aside.
  • Now add some oil in the same pan and add onion, all hot spices, garlic and ginger paste and saute well.
  • Once the spices are fried add salt and add the chicken and fry until the chicken turns white. (This is for chicken biryani. You can also use mutton).
  • At this stage add biryani masala, red chillies, green coriander, green chillies etc. Add and fry everything for a while on low flame.
  • When the chicken is slightly cooked, add plenty of thick curd.
  • You can layer this chicken gravy with rice or if you want, steam the rice and chicken in multiple layers. Place the fried onions, coriander, mint on the top layer and cover with aluminum foil and keep steaming.
  • Seal the edges with the dough and place the pan on a low flame with the cooker on it and let it steam for at least 15 minutes. Your biryani will be ready for sure.
