Materials:

  • 1 kg of chicken (Chicken with bone)
  • 4 cups of basmati rice
  • 3 onions, thinly sliced
  • 4 tomatoes, finely chopped
  • 4 green chilies, cut in half
  • 20 grams of ginger, grind and make a paste (ginger paste)
  • 20 g garlic, crushed (garlic paste)
  • 2 teaspoons of red chillies
  • 2 teaspoons of coriander powder
  • 1 tsp garam masala powder
  • 1/2 cup cilantro, finely chopped
  • 1/2 cup mint, finely chopped
  • Oil as needed
  • Ghee as required
  • Salt to taste

To marinate the chicken

  • 1/2 cup curd
  • 1 tsp red chillies
  • 1 tsp turmeric
  • Salt to taste

How to make Chicken Dum Biryani?

  • To make chicken biryani recipe first we start by making rice. To cook basmati rice separately, wash basmati rice and soak it in water for 15 minutes. Meanwhile, add about 3 liters of water to a large pot and bring to a boil.
  • When the water starts to boil, add about 1 teaspoon of oil and 1 teaspoon of salt. Add the soaked and drained rice, stir once and cook for about 3 to 5 minutes. Keep an eye on the rice as some brands of basmati rice cook quickly and some take longer. Remember, let the rice cook only 80%. Immediately drain the water and spread the rice in a large plate.
  • In a deep pan, heat oil on medium heat, add 1 chopped onion and saute until it turns brown (don’t burn the onion). Remove the fried onions from the oil and keep aside. It will be used for decoration and layering.
  • Next step is to marinate the chicken for chicken dum biryani recipe. Rinse the chicken. Marinate the chicken by adding thick curd, red chillies, turmeric and salt in a large pan. Marinate for at least 30 minutes.
  • Heat the oil in a large pan over medium heat, add the remaining chopped onions and saute for 3 minutes or until the onions are translucent. After that add ginger-garlic paste and saute until the raw smell goes away. Add chopped green chillies and mix for a minute.
  • Add chopped tomatoes to it and fry until the tomatoes become soft. When tomatoes are cooked, add red chillies, coriander powder and salt and saute for 2 minutes. Add 3 teaspoons of coriander and mint leaves and mix.
  • Finally, add marinated chicken for biryani and mix well. Cook until the chicken is fully cooked. Once the chicken is cooked, if it seems too watery, increase the gas flame and thicken the masala. All you need is the seasoning to coat the chicken.
  • Take a large wide, deep pan, add ghee and spread it on the bottom and sides of the pan, reduce the flame. Add about 2 teaspoons of chicken biryani masala and spread it on the bottom. Next, add the cooked basmati rice to the chicken biryani masala and spread the rice gently to cover the chicken.
  • Use a small spoon and scoop the top layer of oil and spread it over the rice, this will add flavor and color to the rice. Repeat the layering process until you have used all the rice and chicken. Sprinkle coriander and mint leaves and fried onions on top and close the lid.
