You can use basmati rice or jeera samba rice to make this biryani. But I suggest you to use basmati rice to make this South Indian Chicken Biryani. The flavor of basmati rice is excellent for any biryani. but it is totally your personal choice and you can use any rice of your choice.

If you want the real taste of whole spices, you can take a muslin cloth and add whole spices to it. Then tie a muslin cloth and keep it while cooking. Once done cooking, you can remove the muslin cloth to add the whole spices. In this way whole spices will not bother you while eating and you will also get the taste of whole spices.

While making South Indian Chicken Biryani, first we have to prepare the ingredients, it takes about 15 minutes. The South Indian Chicken Biryani takes approximately 60 minutes to prepare. It takes a total of 75 minutes.

South Indian Chicken Biryani Recipe | How to Make South Indian Chicken Biryani

Material:

  • 500 grams basmati rice
  • 750 grams chicken
  • 2 tbsp oil
  • 2 tbsp ghee
  • 2 onions finely chopped
  • 3 tomatoes chopped
  • 4 green chilies
  • Separate a bunch of coriander leaves from the stem
  • A bunch of mint leaves separated from the stem
  • 1 cup curd well whipped
  • 1 tsp red chili powder or as per taste
  • 1 tsp coriander powder
  • 1 tsp cumin
  • Whole garam masala (2 or 3 cardamom, 1 inch cinnamon, 1-2 cloves, 1 teaspoon shahi jeera, 1 bay leaf)
  • 1 tsp salt or as per taste

How to make South Indian Chicken Biryani

  • To cook Puri Biryani, heat oil or ghee in a large pan. Put green chillies and whole spices in it. Fry for a minute.
  • After lightly roasting the spices, add chopped onions to it. Fry the onions till light brown.
  • After the onions turn brown, add ginger garlic paste. Fry the ginger garlic paste till all the raw smell goes away.
  •  After this add chicken and fry well. Add tomatoes and ground masala and mix well.
  • Add curd and cover and cook till the chicken is half done. When the chicken is cooked, add coriander and mint leaves to it. stir well.
  •  Add soaked rice, lemon juice and enough water to cook the rice. The amount of water will depend on the quality of your rice. I have used basmati rice. and for that i needed 1.5 cups of water for 1 cup of rice. Since we are cooking on a slow flame, rice is best cooked in less water than usual. Always add water little less than required. You can add water later, if needed.
  • Once you’ve added enough water, stir it and bring it to a boil. After the water boils, cover the pot tightly. Cook on low heat till the water dries up completely. Switch off the flame and let it rest for 15 minutes before opening the lid. This particular recipe took around 25 minutes to cook.
  •  Open the lid, mix gently and serve hot.

Instruction:

  • Soak basmati rice in enough water for 30 minutes.
  • Pour oil and ghee in a large pan. Add cumin seeds, whole spices and green chillies. Let the cumin seeds splutter. Add onions and fry on medium heat till light brown.
  • Add the chicken pieces and fry till the meat turns pink.
  •  Then add chopped tomatoes, salt, red chili and coriander powder and stir well.
  • Lower the flame and add curd to it and mix. Add coriander and mint leaves and mix well.
  • Cover and cook on medium heat till the chicken is half cooked, while stirring occasionally.
  •  Drain the water from the soaked basmati rice and add basmati rice, lemon juice to the chicken gravy. Mix well gently.
  • Add rice to water (add 1.5 cups of water for 1 cup of rice), mix well and bring to a boil.
  • Lower the flame and cover the pan tightly.
  •  Cook on a low flame for about 20 to 25 minutes or till the rice absorbs all the water. Switch off the flame and let it rest for 15 minutes before opening the lid.
  • Serve hot with Onion Raita
