Malabar Chicken Biryani Recipe

What is Malabar Biryani?

Malabar Chicken Biryani is a non-vegetarian rice dish that has taken over the word food. Especially this dish comes from Malabar region of Kerala This dish from Malabar region of Kerala is very popular especially among biryani lovers.

Malabar Chicken Biryani Recipe Tips:

  • Use the best quality basmati rice you can buy as it gives off the aroma.
  • Soak good quality rice for at least 30 minutes to 1 hour. The longer you soak, the longer your rice will last.
  • Use lots of fried onions as fried onions add nice sweetness to the biryani.
  • Cook with basmati rice. Always be near it and cook till it is cooked. So remember that the rice will continue to cook in the steam.
  • Use good quality ghee for fragrance and add it after cooking the biryani.
  • Use a large heavy bottomed pot for the stew portion. Keep the vessel on low flame as far as possible. If you are worried, you can also cook the utensil by keeping it on a pan.

Malabar Chicken Biryani Recipe | How to Make Malabar Chicken Biryani

Material:

  • 3 garlic cloves
  • 1″ came
  • 1 big green chilli
  • 1/2 tsp ground turmeric
  • salt to taste
  • 3 medium onions, sliced
  • 2 tbsp curd
  • 1/4 tsp fennel seeds
  • 1 large tomato, chopped
  • 2″ cinnamon stick
  • 1 bay leaf
  • 4 cloves
  • 4 cardamom pods
  • 2 tsp black pepper
  • 1 tsp garam masala
  • 1 tsp coriander
  • 2 tsp crushed red chili
  • 3 cups basmati rice or jeera rice
  • juice of 1 lemon
  • 1 kg chicken pieces
  • Oil
  • 3 tbsp ghee
  • 6 cups water 1/3 cup water
  • 1 teaspoon rose water
  • 20 nuts
  • 3 tbsp raisins
  • coriander leaves

How To Make Malabar Chicken Biryani Recipe:

  • Finely chop garlic, ginger and green chillies. Add a little water to facilitate the process. Marinate the chicken using half the paste, turmeric, 1 teaspoon red chili, 1/2 teaspoon garam masala and salt. Keep it in the fridge for an hour. Then lightly fry the pieces in oil. Keep aside.
  • Soak 7 cashews in 1/2 cup water. Keep aside for half an hour. Then grind the nuts to make a smooth paste. Keep aside.
  • Soak basmati rice in water for half an hour and keep it aside.
  • Heat some oil in another pan and fry 1/4 cup chopped onion, 13 cashews and raisins separately. Keep aside.

To prepare rice for Biryani:-

Heat 2 tbsp ghee in a deep pan and add one fennel. Fry a medium onion till it becomes transparent. Add cloves, cardamom pod, cinnamon stick and bay leaf. Fry again. Add 8 cups of water along with 3 cups of washed rice. Add lemon juice. Add salt. Let it boil. Then reduce the flame and cover the pan with a lid. Sieve it after cooking and keep it aside.

To prepare gravy for chicken:-

Heat oil in a pan and fry the remaining onions till they turn golden. Then add the remaining paste and fry for a few seconds. Add tomatoes, remaining spices (coriander, red chilli, ground black pepper, garam masala), sufficient salt and cashew paste. Fry again for 3-4 minutes. Cover chicken pieces with 1/3 cup water. Finally, add 2 teaspoons curd and 1 teaspoon vinegar. Cook again for two minutes.

To arrange the levels:-

Take a heavy bottomed deep pan and place a layer of chicken in it. Then add a layer of rice. Add 1/2 tsp rose water. Add chicken and rice alternately till cooked. But make sure the topmost layer is of rice. Add 1/2 tsp rose water. Add 1 tsp ghee.

Now you can garnish Biryani with fried cashews, raisins, onions and chopped coriander.

To make ‘Dum’ Biryani, keep it in a large pan on low flame for 10 minutes.
