Calcutta Style Chicken Biryani Recipe | How to Make Calcutta Style Chicken Biryani

Material:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 3 cups basmati rice
  • 4 potatoes
  • 1 cup curd
  • 1 tsp red chili
  • 1 tsp turmeric powder (haldi)
  • 2 onions, finely chopped
  • 1 inch ginger
  • 8 cloves of garlic
  • 5 green chilies
  • 3 black cardamoms (large cardamom)
  • 1 bay leaf
  • 2 cardamom
  • 2 inch cinnamon stick (dalchini)
  • 5 cloves
  • 8-10 whole black pepper
  • salt to taste
  • 4 tbsp ghee

How to make Calcutta Style Chicken Biryani at home?

  • To make Calcutta Style Chicken Biryani, first marinate the chicken pieces with curd, red chili, turmeric and salt for 45 minutes to 1 hour.
  • Parboiled rice with black cardamom and bay leaves. Rice should be boiled up to 50%.
  • Drain the water and keep the rice aside for later use.
  • Sauté remaining whole spices, black pepper, cloves, green cardamom and cinnamon for 30 seconds or till fragrant. Let it cool and then grind it finely in a mixer grinder.
  • Heat 2 tbsp ghee in a deep pan
  • Mash ginger, garlic and green chillies together
  • When the onion turns light brown, add ginger-garlic-chilli paste to it. Fry for 2-3 minutes.
  • Add red chili, turmeric and fry for a minute.
  • Add the marinated chicken on top and mix well till the spices are well coated on the chicken. Cover and cook on low flame for 10-12 minutes. Add some water if needed.
  • While chicken is cooking, cut potatoes and fry until crisp and cooked.
  • Now take a heavy bottomed non-stick biryani pot or earthen pot and grease it with ghee. Spread a layer of rice and add a layer of chicken gravy and 2 potatoes.
  • Do this three times with a layer of rice. Heat the remaining ghee and pour it on the top layer.
  • If using a clay pot, cover the mouth of the pot with flour and place a heavy weight on top to secure the lid. Cook on low heat for 10 to 15 minutes and let stand for 30 minutes before opening.
