Preparation time for Chicken Hariyali Kebab Recipe:

The Chicken Hariyali Kebab recipe takes 20 minutes to prepare the ingredients. Once prepared, the recipe takes 20 minutes to prepare. Apart from this, it takes 30 minutes for marination i.e. a total of 70 minutes. This dish is sufficient for 3-4 members if prepared with the method given below.

Material:

  • 500g boneless chicken breast or legs

Hariyali marinade

  • 1 cup tightly packed mint leaves
  • ½ cup cilantro tightly packed
  • 3 green chilies
  • 2 inch piece ginger
  • ¼ cup curd
  • 1 tbsp lemon juice
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ¼ tsp turmeric
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • 1 tsp salt (as per taste)
  • 1 tbsp mustard oil

for busting

  • 1 tbsp cooking oil (groundnut oil/olive oil/sunflower oil)
  • 1 tbsp melted butter ghee

How To Make Chicken Hariyali Kebab Recipe:

  •  If using oven, preheat to 230°C/446°F.

prepare the chicken

  • Clean the chicken and cut it into 1½ inch cubes. (note 1)
  • 500 grams boneless chicken

Make Greenery Marinade

  • Finely chop green coriander, stalk, mint, chilli and ginger. Place these in a blender jar along with spices, lemon juice and curd.
  • 1 cup mint leaves, ½ cup coriander leaves, 3 green chilies, 2 inch ginger piece, ¼ cup curd, 1 tbsp lemon juice, 1 tsp coriander powder, ½ tsp garam masala, ¼ tsp turmeric, ½ tsp ground cumin , ½ tsp black pepper, 1 tsp salt
  • Blend till you get a smooth paste.
  • Reserve ¼ cup marinade and keep in refrigerator to use as a sauce.

Marinate the Chicken

  • Add the remaining green marinade to the chicken. Add mustard oil and mix.
  • 1 tbsp mustard oil
  • If possible marinate overnight for best results. If you are in a hurry, marinate for at least 30 minutes.

Bake Chicken Hariyali Kebabs

  • Thread the marinated chicken cubes onto the skewers. Place the skewers on a foil-covered baking pan. Grease it with oil-ghee mixture.
  • 1 tbsp cooking oil, 1 tbsp melted butter or ghee
  • Keep in oven. Fry for 10 minutes.
  • Take out the pan and fry again by adding oil and ghee.
  • Change oven setting to “Broil” and cook until browned, 6 to 8 minutes.
  • Serve with reserved chutney.
  • Cook the Hariyali Kebabs in a pan
  • Put the marinated chicken on the skewers. Spread half of the oil-ghee mixture in a grill pan or regular mixture.
  • Place the skewers on a greased pan and cook for 5 minutes. Continue frying in the remaining oil.
  • Flip and taste the skewers. And cook for 5 to 6 minutes.

Cook Hariyali Kebabs Using the Grill

  • Remove excess marinade and thread chicken onto skewers. Grill for 12 to 14 minutes, turning once in between.
